Does anyone know what fish this is? I bought it from my regular fishmonger in Marine Terrace but he couldn't tell me exactly what fish it was. Rather, he told me in Chinese but I didn't get it. Cost S$15 for the whole fish which was just over 1kg. I'm guessing it's red sea bream but if anyone knows, appreciate your letting me know.
Anyway, his recommendation was spot on! It was an excellent fish. Fresh and moist and not a hint of "fishiness" if you know what I mean.

Get the fishmonger to scale and gut the fish. But when you get home, wash it thoroughly and make sure all the scales are off. Sometimes the fishmonger does a rush job and leaves some scale on. Definitely, cleaning thoroughly inside and outside is a must.

I marinated it in a blended paste made of laksa leaves, basil, chilli padi and olive oil. Stuffed the cavity with lemon and placed the marinated fish on sliced lemon and topped it with even more sliced lemon.

Place it on parchment paper and seal it with foil. Bake it in a 220 degree celcius oven for 40 minutes, uncover and continue to bake for another 20 minutes to "cake" the marinade on the fish.

Another excellent fish dish!
