Whole Wheat Bee Hoon with Porcini Mushroom Broth, Gingko Nuts and Baby Corn

Soak whole wheat bee hoon in water for 5 minutes. Drain and set aside. Soak some porcini mushrooms in boiling water and set aside. Fry up shallot, chilli padi and onion in olive oil until it just starts to brown(smells great already at this point). Add gingko nuts (fresh not canned) and stir fry some more, add baby corn and stir fry some more. Add beaten egg with white pepper, let it partially set and stir fry through. Add softened bee hoon and mix well. Add the porcini AND the mushroom broth to soften and flavour. Add chye sim and stir through until wilted.
