japanese mushroom.jpg Shimeji Mushroom and Coriander Frittata

 This was a yummy concoction and one of the items I made for dinner tonight. Really simple too (and as usual, no salt). Mix up some Shimeji Mushroom and Chopped Coriander in a couple of raw eggs. Incidentally, I used the white Shimeji Mushroom. Add pepper and make sure it's combined thoroughly.

Cook in some olive oil. That's it. Twas excellent. Make sure you use lots of coriander. It's worth it.
