Red Grouper, Spinach and Baby Corn in Chicken White and Green Carrot Soup
I first made the soup the evening before by putting one whole chicken breast without the skin, one green carrot and one white carrot (peeled and cut into rings) and two pieces of dried scallops. I just put all those ingredients in a large crockpot and slow boiled it overnight.

In that broth (which in itself is yummy) you add cut filleted red grouper, chinese spinach and baby corn. Since I added A LOT of spinach, it was a filling and satisfying meal in itself.
