Let me start with the finished picture of the meal. Twas exceedingly good. No salt.

 Fritata, Garlic Celery and Organic Wholewheat Walnut Bread

The fritata or actually a variation was made from chopped chinese parsley, diced tomatoes and shimeji mushrooms. I say variation because technically, a fritata is oven baked so really, it’s a glorified omelette but sounds better if you call it a fritata. I had made a similar item a couple of weeks ago. The bread was freshly made at home using Organic Wholemeal Flour and Organic Walnuts. It was denser than usual bread you buy because it’s made from only wholemeal flour (no wheat flour) and I don’t employ gluten. However, the taste was great and I do like the texture. AND…. there’s nothing better than the smell of freshly baked bread. Really!

Used the leftover bread to make an avocado, grilled chicken, tomato and cream cheese sandwich which I took to work for lunch the next day. No pics of that but it was a very satisfying meal.

Finally, the last item for this meal was fresh celery stir fried in lots and lots and lots of garlic, butter and majoram.

Yummy with a glass of Shiraz!
