Pretty simple. Marinate good quality beef for about 4 hours in sake and XO Scallop Sauce. Make sure it’s marinated all around. I use Wagyu beef if available (and if on offer ;-))

When ready to prepare, take the beef out of the marinade and pat dry. Sear over very hot pan until brown and crispy on the outside and rare in the inside. Remove and place on warmed plate. Pour the rest of the marinade into the pan and reduce it by half. Throw in the bean sprouts in the reduction and crack some fresh black pepper over.

Serve and enjoy.
