Yeah, yeah, yeah… even if I don’t blog as frequently as I used to, I still cook. My favourite has always been fish and especially so if my regular fishmonger at Marine Terrace Wet Market has a good one. I saw a whole sole which looked so fresh that I had to have it. Asked him to fillet it (only $6 a whole sole… that’s not bad for the quality I got), sprinkled some dill on both sides and rubbed some garlic olive oil on it.

Tres simple.

Pan fry the fish until just done, serve with buttered baby carrots topped with roasted pumpkin seeds. With a wedge of lime, the pretty picture is painted.

Not only does it taste fab, it’s healthy and the colours make for a aesthetically pleasing sight.
