Fig Jam Muffin

I was given some Fig Jam from Margaret River a few months ago. Although I do like jam, I don’t eat it everyday and hence takes me a while to finish the jam.

Last weekend, I noticed that the jam was expiring this month and rather than waste it, I improvised with a basic muffin recipe and made this Fig Jam Muffin. I completely omitted the sugar from the recipe and used the jam instead. The basic recipe called for 3 tablespoons of sugar. Although the picture looks good, in the future, I’d still add perhaps one tablespoon of sugar. It just wasn’t sweet enough. However, when I toasted it next morning with some butter, you didn’t quite notice the reduced sweetness.

All in, will do it again with a few tweaks and experiment with different jams.
